Ricotta Passita – Aged Ricotta with Mountain Herbs (8–10 oz) Made from the whey of our family’s Sopravvissana sheep, Ricotta Passita is a rare sheep’s milk ricotta aged in natural caves and infused with wild mountain herbs. Basket-aged for the first month, then matured for 3 to 9 months, it develops a firm texture, deep flavor, and a distinctive dark rind formed by native cave microbes. The herbed exterior—seasoned with peperoncino, thyme, and rosemary—adds layers of complexity to the earthy, full-bodied interior. Pungent and aromatic, this cheese reflects the wild Abruzzese pastures where our sheep graze. Featured in Wine Spectator and listed in the Slow Food Ark of Taste, it’s a bold, unforgettable cheese for cutting boards, shaved into warm dishes, or simply enjoyed on its own.
