Cook as per directions below, or use this Lemon Herb seasoning to make Tofu Ricotta, and serve as a dip with a drizzle of olive oil, or layer in vegan lasagna! Simply add undrained firm or extra firm tofu to a food processor with desired amount of seasoning and process until ricotta-like texture is achieved. Directions: Drain and pat dry firm or extra firm tofu. Add a bit of oil to a pan. Crumble tofu into large chunks, add 1/3 cup seasoning if using 12oz tofu or 1/2 cup of seasoning for 16oz blocks of tofu. Mix until tofu looks lightly grilled like a traditional scramble.
