Kombucha is too casual. Dealcoholized wine is a compromise. Dry Wit is neither. We're building a new category in American craft beverages. The foundation is verjus, the high-acid juice pressed from grapes that wine production discards before harvest. It gives our beverages the structure and tension that makes them work alongside food. We build complexity through slow-brewed botanical tisanes, made from whole ingredients, never extracts, and aged a minimum of one month before bottling. Flavor continues to mature in bottle and batch variation is intentional. We are not trying to mimic wine. We built our products from the ground up using techniques borrowed from beer, wine, and tea production to create real complexity: acidity, tannins, and mineral profiles that pair beautifully with food. Built in-house in Minnesota. Three distinct expressions. Pippi, Salinger, and Bruce cover the range of a structured meal, from aperitif to closer. Whether guests drink or not, everyone at the table deserves something worth talking about.
