Filadelfia is a family farm divided among 12 siblings, each tending their own plot yet united by the same dedication to quality. Beneath the shade of bananas, beans, and tomatoes – and alongside a small native forest – farmer Danilo Gómez cultivates Pink Bourbon in rich volcanic soils at 1,840 m.a.s.l. Only the ripest cherries are hand-picked, density-sorted, and depulped, with the sticky, sugar-rich mucilage left intact. Through an anaerobic honey process and a slow 16-20 day canopy-bed drying, the beans develop their signature character. In the cup, it’s a bright, fruit-forward experience: the juicy sweetness of strawberry, the tang of raspberry, and the deep, jammy richness of blackberry. Preface Coffee is the culmination of a journey bringing together books and coffee, with each of our coffees categorized according to book genre and a fictional story that draws on nostalgia and memories to convey the experience that each coffee has to offer. In keeping with the book theme, we offer two lines of 'publications': hard-covers, which are our book-style boxes reserved for single estate coffees where we celebrate the varietal; soft-cover bags reserved for our blends, which are easy to drink and easy to make.
