All of our salami and chorizo is shelf stable! No refrigeration required! Our No. 1 Salami has a 10-12 month shelf life. We stamp the salami with a 12-months "Best if Used By" date from the day they are packaged and try hard to not ship any with less than 10-months left. Wine & Cheese Pairings: Pair No 1 with fruity red wine like Merlot, full-bodied white wine like Chardonnay or Champagne! Pairs well with a Sharp Cheddar Cheese.
