Description

Manteca Caciocavallo Podolico – Butter-Filled Aged Cheese from Abruzzo A cheese within a cheese. Manteca is a mini version of our prized Caciocavallo Podolico, filled with fresh butter and aged for 3–6 months—a true delicacy of the Pasta Filata (stretched curd) tradition. Made from the sweet, herbaceous milk of the rare nomadic Podolico cow, the curd is stretched by hand and wrapped around a core of fresh Podolico butter, then tied, hung, and aged. As the outer shell matures, the inner butter remains soft, creating a beautiful contrast of textures and flavors. Rich, rustic, and entirely unique, Manteca is a showstopper for cheese boards and a luxurious treat for serious dairy lovers. Sold by the piece and typically weighing 10-12 ounces each, these mini Caciocavallo's are about 75% Podolico butter and can be used in numerous special ways. Elevate your signature pasta dish by using the rich interior butter then grating the exterior cheese to finish the experience. Spread on local artisan bread, or melt a slice of this exceptional butter/cheese combination on dry aged steak.    Caciocavallo Podolico Award Recognition, exterior cheese: 2012 Gambero Rosso Formaggi i Migliori d'Italia  1st Prize Biocaseus, Pienza 2007-2009 1st and 2nd Prize 'Golden Caciocavallo' Frosolone 2004 2nd Prize "Golden Caciocavallo" Frosolone 2005-2007, 2010-2011

Marcelli FormaggiEstablished 2007

Marcelli Formaggi is a family- owned importer of rare and exceptional foods from the heart of Abruzzo, Italy- one of the country's most pristine and agriculturally rich regions. We work directly with small producers and our own family's farm, La Porta dei Parchi, to offer products that are deeply tied to place, tradition and quality. Our lineup includes award-winning raw milk cheeses made from the milk of our own sheep and goats, raised in the high Gran Sasso National Parks, as well as bronze-cut pasta, raw mountain honey, robust finishing olive oils and truly incredible gluten free pastas. Everything we source is small- batch, seasonal, and hard to find anywhere else- chosen not just for taste but for story and integrity. Whether you're curating a retail shelf or designing a standout menu, Marcelli Formaggi brings the soul of rural Italy directly to you.
