All of our salami and chorizo is shelf stable! No refrigeration required! Our Rojizo Chorizo has a 10-12 month shelf life. We stamp the chorizo with a 12-months "Best if Used By" date from the day they are packaged and try hard to not ship any with less than 10-months left. Wine & Pairings: Rojizo’s full-flavored smokiness pairs well with slightly sweet white wine like Pinot Gris, and sparkling wine like Prosecco. Pairs well with Aged Manchego, Chevre or Goat Cheese.
