Description

An appetizing condiment with a slightly spicy flavor. The combination of typical Calabrian ingredients is sublime: smoked sheep ricotta, dried tomatoes and red onion from Tropea Calabria PGI, in addition to almonds and pine nuts, make this recipe a triumph of goodness. Ideal for flavoring delicious pasta dishes and appetizers. Recommended with short pasta (Penne, Fusilli).Preparation for 4 people: Put the pasta in a pot of boiling water and add a tbsp of salt.Once pasta is cooked, drain it with the colander and keep ¼ of cup of cooking water. Putthe pasta back into the empty pot, pour the Calabrian pesto and add the cooking water.Stir everything for a minute and then put in the plates.
