Overview

Description

This single origin bar is made of only one ingredient nicaraguan cacao. That's it. We source premium cacao beans that have delicious, terroir driven flavor profiles and in this bar we have added no sugar or sweeteners of any kind. Flavor notes: intense, dark, and bitter but with a hidden floral sweetness natural to the Nicaraguan beans we use. This is not the baking chocolate in the pantry you bit into as a child while bitter, this bar also has complex notes of cocoa, purple berries, and flowers. Pairs well with: savory pastes like tahini, roasted nuts, dry red wine & indomitable spirits. Origin information: direct sourced from cacao bisiesto, a boutique cacao company that purchases beans from surrounding small-holder farmers in the highlands of nicaragua in order to centrally ferment, dry and internationally market these fine flavor beans. Ingredients: cacao only. Weight: 2.6oz.

XocolatlEstablished 2014

Xocolatl began after founders, Elaine and Matt, moved to Costa Rica with their toddler and newborn in tow for an unplugged life and a little adventure. Renting a tiny house in the jungle, they settled into their new community and quickly befriended local chocolate makers who were making dark chocolate from cacao growing in those very jungles. The chocolate was intensely flavorful, unadulterated, and pure, unlike the dull, sweet flatness of mass-produced chocolate. Inspired by their experiences, they resolved to learn how to make this type of pure chocolate and introduce it to Atlanta where they knew other people would love it too. Since then, we’ve produced fine flavor chocolate with whole, quality ingredients, and garnered awards from The Good Food Foundation, UK Academy of Chocolate, and The Taste Awards, and Slow Foods Atlanta. Along the way, we’ve stayed committed to our partners growing the cacao we purchase, traveling to origin farms when possible to strengthen our direct trade relationships and ensure transparency, fair pay, and sustainable practices are maintained along the way. With gratitude to the people and place that inspired us, we hope our chocolate brings you and your customers the same sense of contentment and adventure from which it originated!
