Pecorino di Parco – Aged Sheep’s Milk Cheese Also known as “Pecorino of the Parks,” this organic, raw milk cheese is a classic expression of Abruzzo’s high mountain terroir. Aged for at least 6 months, it’s made with just sheep’s milk, salt, and rennet—nothing else. Grazing in the Gran Sasso, where over 120 wild herbs and flowers flourish, our Sopravvissana sheep produce milk with extraordinary depth. The result is a rich, nutty, full-flavored pecorino that reflects its pristine environment. Unlike saltier southern styles, Pecorino di Parco is balanced and elegant—ideal for pairing with Mostocotto or Miele di Castagno. A true standout on the cheese board or specialty shelf.
