THE DETAILS Country: Colombia Producer: Arnulfo Caro and Martha Cartagena Farm: Hoyo Rico Varietal: Chiroso Process: Washed Notes: Mango, kiwi berry, rooibos Mood: Refreshing, refined, elegant Genre: Magical realism Arnulfo Caro and Martha Cartagena, a husband-and-wife duo, started growing coffee a few years ago in Anzá, Colombia. Previously, Arnulfo worked as a gold miner and it was through his brother that he was inspired to devote his attention to coffee production. The farm is situated at a high altitude, where they focus on extremely high quality varieties of Gesha and Chiroso. Arnulfo is primarily responsible for the work on the farm, while Martha tends to the processing and drying. We have purchased a small amount of their washed Chiroso, and we couldn’t be more excited to have this as our first offering of this exciting varietal. Cherries are picked at peak ripeness, where the seeds are then held in the cherries for three days before de-pulping. The seeds are then submerged in water for up to six days for fermentation, washed, and then dried on raised beds. In the cup we get a wonderful tropical concoction, with subtle tea-like aromatics. We taste mango, kiwi berry, and rooibos tea.

Preface CoffeeEstablished 2024

At Peace Coffee we believe that coffee is one of life's small pleasures, and we believe that everyone should be able to indulge in this daily ritual. Roasted in small batches, our coffees are sourced with great intention ensuring that each coffee is traceable back to the producers. Our roasting philosophy is simple: we let the coffee take the lead, and we roast according to what we believe allows the coffee to taste its best. Preface Coffee is the culmination of a journey bringing together books and coffee, with each of our coffees categorized according to book genre and a fictional story that draws on nostalgia and memories to convey the experience that each coffee has to offer. In keeping with the book theme, we offer two lines of 'publications': hard-covers, which are our book-style boxes reserved for single estate coffees where we celebrate the varietal; soft-cover bags reserved for our blends, which are easy to drink and easy to make. We would be delighted to have you along for the journey.
