Overview

Description

Use einkorn flour for pancakes, waffles, cookies, cakes, muffins, pizza – and more. With a subtle nutty flavor and decadent buttery finish, einkorn will give anything you bake more depth and complexity. And because it’s packed with protein, fiber and antioxidants, you don't have to choose between healthy and delicious. Einkorn is one of the oldest domesticated wheats. Because farmers have been growing this ancient grain for thousands of years, it's much easier to digest than many modern wheats that have been bred for yield and gluten strength. A few things to know when baking with einkorn. First, it doesn't absorb as much water, so it will give you a wetter dough. It also has less gluten potential, so it doesn't form those stretchy gluten bonds as much as other wheats. Don't be scared. Once you get to know this flour you will be hooked. PRO TIP: If subbing in a recipe that calls for whole wheat flour, reduce water by 5-10%.

Unified MillsEstablished 2023

Unified Mills exists as a solution to the disconnect between bakers and their single most important ingredient—flour. By partnering with independent flour millers across the U.S., we bring fresh, high-quality flour directly to the doorstep of home bakers. How do we do that? Unified Mills sells fresh, regionally distinct flour made by craft millers who source their grain directly from local farmers. This ensures that the flour is not only of the highest quality but also reflects the unique characteristics of its region. The closer a flour mill is to the grain farm, the fresher and tastier the flour becomes. It carries the distinct flavors of the soil and climate in which it was grown, making it much more than just a basic pantry staple. While flour is often treated as a commodity, behind its veil of anonymity lies an endlessly rich ingredient with unique culinary distinctions from field to field and mill to mill.
