Spoonable, spreadable Preserved Lemon Paste adds depth of flavor and complexity that lemon and salt alone cannot. Our Moroccan blend is versatile: a rub for raw meat, fish and vegetables, a cocktail mixer and a cheese pairing. It replaces lemon juice and zest in baking, adding rich, nuanced flavor to both sweet and savory dishes. Meyers are sweeter and less acidic than standard lemons, delivering citrusy brightness and balanced flavor. We source citrus from family-owned, organic California farms and cure them with a signature blend of spices. A zero-waste product, we use the entire lemon—skin, seeds, and all—barrel-aging it for up to three years before hand-blending into paste. Due to the natural curing process, you may notice color variations from yellow to amber. This is normal and does not impact the flavor or quality. We source imperfect Meyer lemons from organic, family-owned farms in California and cure them nearby with sea salt, whole spices and love. That’s it. A zero-waste product, we cure the entire lemon—skin, seeds and all. That’s If & When. Handcrafted in small batches, If & When is barrel-aged for up to three years, so your customers can "taste the paste" year-round. Meyer lemons have a sweeter, less acidic flavor compared to Lisbon or Eureka lemons. Their thin, aromatic skin makes them ideal for preserving, creating a complexity of flavor that lemon and salt alone cannot achieve.
