Selected raw sheep's milk, following an artisan recipe. With natural curds they coagulate the milk. The curd passes to the filling bottle to be inserted into molds. Then they are placed in the pressing area to extract the excess serum. Once the pressing time has passed, the cheese is unmolded and introduced into brine.
