Pecorino Gregoriano – “Soft Pecorino” from Abruzzo Handmade by the legendary Gregorio in the mountains of Abruzzo, Pecorino Gregoriano is a rare, soft-textured pecorino made from raw Sopravvissana sheep milk and aged for 3 months or more. Creamy, gently acidic, and rich with the wild flavors of Gran Sasso pastures, this cheese is unlike any other in Italy. Crafted in small quantities and nearly impossible to find outside our region, it offers a supple, yielding texture with subtle grassy notes and a delicate tang. Pair with our Miele di Girasole (Sunflower Honey) for a beautiful contrast of textures—sweet, floral, and creamy all at once. A true discovery cheese for specialty shops, chefs, and those seeking something rare and soulful.
