Cacao butter is a product of the cacao plant (Theobroma cacao). We separate the fresh cacao beans from the pod and air dry them at low temperatures. The beans are then passed through a roller to break their outer membranes before being ground and pressed to remove the oil. Once the oil is pressed out of the cacao nibs, the "butter" is extracted, separating it from the fibrous powder. This process doesn’t involve any fermentation or even heat application, the resulting raw cacao butter is not bitter.
