Each spring, as the snow begins to thaw and the forest awakens, we tap wild birch trees throughout Alaska’s Susitna Valley and gather their sap during a brief harvest measured in weeks. Birch syrup is a regenerative forest crop, produced from healthy, living forests that can be sustainably tapped season after season while preserving the surrounding ecosystem. Producing pure birch syrup is slow and demanding work. It takes approximately 110 gallons of birch sap to make a single gallon of syrup, making it one of the rarest and most labor-intensive natural sweeteners in the world. Unlike maple syrup, birch syrup is less sweet and far more complex, with rich notes of caramel, molasses, coffee, dark fruit, and savory umami. Its depth and versatility have made it a prized ingredient among award-winning and Michelin-starred chefs, as well as luxury lodges, restaurants, bakeries, breweries, and other high-end culinary programs. Chefs use it in glazes, marinades, vinaigrettes, baked goods, desserts, cocktails, and savory dishes where a more distinctive and balanced sweetness is needed.
