Though the outside hard shell of the nut is exposed to a few seconds of steam before it cracks, the inner nut never experiences heat. Cashews are high in magnesium, copper, and manganese, and a great source of vitamin K, phosphorus, zinc, and protein. The activation process increases the bio-availability of these important nutrients. We activate our raw cashews using a low-temperature soaking and dehydrating method.
